GLAZED ONIONS 
Makes 4 servings. This is an excellent accompaniment to next weeks roast turkey.

1 tbsp. plus 1 tsp. butter
4 c. pearl onions
1/4 tsp. salt
1 tbsp. plus 1 tsp. firmly packed brown sugar
2 tbsp. water

In 12 inch skillet heat butter until bubbly and hot; add onions and salt and saute over low heat, stirring occasionally, until onions are thoroughly cooked, 20 to 25 minutes (to prevent onions from splitting or burning during cooking, stir gently with a wooden spoon). Sprinkle sugar over onions and continue sauteing until sugar melts; add water. Increase heat and bring to a boil, stirring gently and cooking until sugar mixture reduces and glazes onions; serve immediately.

Each serving provides: 2 Vegetable Exchanges; 1 Fat Exchange; 20 calories Optional Exchange.

Per serving: 100 calories, 1 g protein, 4 g fat, 17 g carbohydrate, 192 mg sodium, 0 mg cholesterol.
