BAKED STUFFED TOMATOES 
4 lg. tomatoes
3/4 c. chopped onion
1/4 lb. mushrooms
4 oz. Canadian bacon
1 tsp. parsley
1 tsp. chives
6 tbsp. olive oil
1 egg, beaten
Fine bread crumbs
Salt and pepper

Wash tomatoes. Cut in half. Scoop out about 3/4 of the tomatoes interior. Chop interior. Chop onion, mushrooms, and bacon. Heat 4 tablespoons of oil in skillet. Saute all together for about 10 minutes (tomato pulp, onion, mushrooms, and bacon). Add parsley and chives. Stir frequently until liquid appears.

Stir in beaten egg. Season with salt and pepper. Fill tomato halves. Put into oiled baking dish. Sprinkle with bread crumbs and 2 tablespoons of oil. Bake at 400 degrees for 30 minutes.
