CHRISTMAS FRUIT CAKE 
1/2 c. butter
1 c. sugar
1 egg (well beaten)
1 tsp. vanilla
1 1/2 c. applesauce
1 c. walnuts, coarse
1 c. raisins
3/4 c. citrus fruit
1/4 c. maraschino cherries
1 c. dates, chopped fine
1/2 tsp. cinnamon
1/4 tsp. cloves
2 tsp. baking soda
2 c. Wondra flour

Cream butter and sugar. Add egg and vanilla; mix well. Add all ingredients and mix well. Turn into well greased loaf pan or into greased fluted cake pan (dusted with flour). Bake 1 hour, 350 degrees. Weight of cake - 5 pounds.
