BAKED CAJUN CABBAGE 
1 lg. head cabbage
1 c. chopped green onion
1 c. chopped celery
1 c. chopped bell pepper

TOPPING:

1 c. chopped green onions
1/4 c. seasoned Italian bread crumbs

CHEESE SAUCE:

1/2 c. butter
4 tbsp. flour
1 1/2 c. milk
1/2 lb. cheddar cheese, shredded

Cut cabbage into bite-size pieces. Boil about 10 minutes, uncovered until tender crisp, drain, set aside. In separate saucepan combine butter and flour, blend well. Add onions, celery and pepper, saute 10 minutes. Add milk, blend well over low heat until smooth. Put cabbage in 2 quart casserole dish. Top with sauce, sprinkle with green onions and bread crumbs. Bake in 350 degree oven for about 30 minutes.
