GOURMET COLESLAW 
4 c. shredded cabbage (1/2 red, 1/2 green)
1 c. cauliflower, chopped
1 c. celery, finely chopped

DRESSING:

1 c. sour cream
1 c. mayonnaise
1 tbsp. sugar
1 tbsp. wine vinegar
1 tsp. lemon-pepper seasoning
1/4 c. green onion, chopped
1/4 c. green pepper, chopped
1/2 c. cucumber, chopped

TOPPING:

1 tbsp. butter
1/2 c. chopped peanuts
2 tbsp. Parmesan cheese

Combine cabbage, cauliflower, and celery. In separate bowl, mix sour cream, mayonnaise, sugar, vinegar, and lemon-pepper seasoning, then add green onion, green pepper and cucumber to it. When ready to serve, toss dressing with cabbage mixture. Put into serving bowl. Make topping by melting the butter in small fry pan, then add peanuts to coat. Remove from heat, cool slightly and add Parmesan cheese. Sprinkle this topping over coleslaw.
