HAYRIDE KITCHEN BEAN SOUP | |
1 lb. Great Northern beans 1 c. chopped onion 2 tbsp. chopped parsley 1/2 to 1 tsp. black pepper 2 tsp. salt 1 clove garlic 1 1/2 c. diced bacon or ham 3/4 c. celery with tops 1 tsp. garlic salt 5 3/4 c. water 3 1/2 tbsp. cooking oil Start beans cooking in the water. Saute bacon, onion, celery and garlic in oil; add to beans and cook 2 hours. If necessary, add water while cooking. Then add other ingredients and cook 10 to 20 minutes longer. Remove 1 cup beans and mash. Then add back to pot and cook till thickened. |
