SPINACH BALLS 
2 (10 oz.) frozen spinach
3 c. herb seasoned stuffing mix
1 lg. onion, finely chopped
6 eggs, well beaten
3/4 c. melted butter
1/2 c. grated Parmesan
1 1/2 tsp. pepper
1 1/2 tsp. garlic salt
1/2 tsp. thyme

Cook spinach, drain well, squeeze to remove extra moisture. Combine all ingredients, mix well. Shape into 3/4 inch balls. Place on lightly greased cookie sheets. Bake at 325 degrees for 15 to 20 minutes.

OR

Flash freeze on a cookie sheet until firm and freeze in plastic bag. Thaw slightly. Bake at 325 degrees for 20 to 25 minutes.
