SPANISH RICE PRONTO 
1/2 c. thinly sliced onion
1/3 c. diced green pepper
2 c. Minute Rice
1/4 c. bacon drippings or butter
2 c. hot water
2 cans (8 oz. each) tomato sauce
1 tsp. salt
Dash of pepper

Saute onion, green pepper and Minute Rice (right from the box) in the bacon drippings. Add remaining ingredients; mix well, bring to a boil, then reduce heat and simmer, uncovered, 5 minutes. (Serves 6.)

Or use 4 cups (2 cans, 1 pound each) tomatoes and omit the water.

Beef Spanish Rice: Prepare as above, sauteing 1/2 to 1 pound ground beef with the rice.

Franks and Spanish Rice: Prepare as above, sauteing 6 frankfurters, cut in 1 inch pieces, with the rice.
