ELEGANT CHEESE & MACARONI 
1/2 lb. or 2 c. macaroni
1 sm. onion, minced
1/2 c. butter
1 1/2 tsp. flour
1/4 tsp. dry mustard
3/4 tsp. salt
Dash of pepper
2 c. milk
1 lb. process American cheese, grated
1 c. fresh bread crumbs or cracker crumbs

Cook macaroni in boiling salted water about 9 minutes or until tender, drain. Saute onions in 2 tablespoons butter until clear; blend in flour, mustard, salt and pepper. Add milk gradually, cook stirring until smooth. Add all but 1/2 cup cheese; stir until cheese is melted. Combine macaroni and sauce; pour into greased 1 1/2 quart casserole. Sprinkle with reserved cheese. Melt remaining butter, coat bread crumbs. Place over cheese. Bake, uncovered in 375 degree oven for about 20 minutes or until top is browned. Yield: 6 to 8 servings.
