BANANA-BLUEBERRY MUFFINS | |
2 med. extra-ripe bananas, peeled and mashed 2 eggs 1 c. brown sugar, packed 1/2 c. butter, melted 3/4 c. frozen blueberries, thawed 1 tsp. vanilla extract 2 1/4 c. flour 2 tsp. baking powder 1/2 tsp. ground cinnamon 1/2 tsp. salt Combine bananas, eggs, sugar and butter until well blended. Stir in blueberries and vanilla extract. Combine flour, baking powder, cinnamon and salt. Carefully add flour mixture to banana-blueberry mixture. Spoon into muffin cups. Bake in 350 degree oven for 25-30 minutes or until golden brown. When they come out of the oven, brush with melted butter. (This is butter which you have melted separately -- not the butter in the list of ingredients above.) |
