SCALLOPED TOMATOES 
1 (16 oz.) can stewed tomatoes
1/4 c. green pepper, chopped
1/4 c. celery, chopped
1 to 2 tbsp. cooking oil
1 tsp. oregano
Parmesan cheese

Saute peppers, celery and onion in cooking oil, add to tomatoes. Place mixture in a casserole dish. Mix oregano with bread crumbs. Add just enough bread crumbs to tomato mixture small amounts at a time until mixture thickens.

Spread remaining bread crumbs over top of casserole. Sprinkle with Parmesan cheese. Bake 45 to 60 minutes in 350 degree oven. Good as a side dish with meat loaf.
