MAMA LEAH'S LASAGNA 
1 lg. onion, chopped
1/2 tsp. garlic powder
2 tbsp. salad oil
1 qt. tomato juice
1 (6 oz.) can tomato paste
1 1/2 tsp. salt
3/4 tsp. Italian seasoning
1/8 tsp. pepper
1 med. green pepper, diced
2 tbsp. salt
4 to 6 qts. boiling water
1 lb. wide egg noodles
2 1/2 c. ground beef, browned
8 oz. (1 c.) cottage cheese
8 oz. Mozzarella cheese, sliced

In saucepan, cook onion and garlic in oil until crisp and tender. Add tomato juice, tomato paste, 1 1/2 teaspoons salt, Italian seasoning and pepper. Cover and simmer 30 minutes. Add green pepper, cover and cook additional 15 minutes. Add 2 tablespoons salt to boiling water, add noodles, cook until tender. Drain. In a 13 x 9 inch casserole dish layer noodles, meat, sauce, cottage cheese and Mozzarella cheese, then repeat second layer and ingredients with both cheeses on top. Bake in 350 degree oven 20 minutes.
