PECAN - CHEESECAKE SQUARES 
1/3 c. butter
1/3 c. packed brown sugar
1 c. unsifted all-purpose flour
1/2 c. pecans, chopped
1 pkg. (8 oz.) cream cheese
1/2 c. sugar
1 egg
1 tbsp. milk
1 tsp. lemon juice
1 tsp. vanilla

Microwave (high) butter in uncovered glass mixing bowl 20 to 30 seconds or until softened. Blend in brown sugar until creamy. Mix in flour with fork until crumbly. Stir in pecans. Set aside 1/2 cup of mixture. Press remainder into bottom of 8 inch square microwave baking dish.

Microwave (high), uncovered, 2-2 1/2 minutes or until mixture is puffed and has a dry appearance, rotating dish once. Set aside. Microwave (high) remaining crumb mixture in uncovered dish 1-1 1/2 minutes or until lightly toasted, stirring once or twice. Set aside.

Microwave (high) cream cheese in uncovered small glass mixing bowl 30 - 45 seconds or until softened. Blend in sugar; beat in egg. Mix in milk, lemon juice and vanilla. Spoon on to base, spreading evenly. Sprinkle with lightly toasted crumb mixture. Microwave (high) uncovered, 5-6 minutes or until center is set, rotating dish once or twice. Cool completely. Cut into bars. Store in refrigerator.

Makes about 24 bars.

Since microwave ovens vary in power, you may need to adjust your cooking time.
