COUNTRY TOMATO JAM 
4 1/2 lbs. tomatoes, peeled
4 1/2 c. sugar
1 tbsp. broken cinnamon
1 1/2 c. vinegar
1/2 tsp. allspice
1 tsp. cloves

Scald, peel and quarter tomatoes. Put in granite pan to cook, and add sugar, vinegar, and spices. Simmer slowly until thickened, then put in hot sterilized jars and seal.

This is a delicious recipe but very hard to get thick enough. I simmered and boiled for several hours. Finally, settled for a thick syrup.

Our favorite way to eat this is on Ritz crackers.
