ECLAIRS/CREAM PUFFS 
1 c. water
1 c. flour
1/2 c. butter
4 eggs

Heat the water and butter in 1 1/2 quart pan over medium heat until it boils. Quickly mix in the flour and cook until it forms a large ball of dough (this happens rapidly) - STIR CONSTANTLY! Transfer dough to mixing bowl. Using electric mixer, beat in eggs ONE at a time, beating well after the addition of each. Drop onto greased cookie/baking sheets.

Large tablespoon-sized poof of dough is good size. Bake at 375 degrees for about 35 to 45 minutes. Cool on wire rack. Cut off top and remove any excess dough in the cavity. Fill with vanilla pudding, replace top, and spread on Chocolate Fudge Frosting. Or fill with sweetened whipped cream, replace top and cover with sifted powdered sugar. Makes about 36.
