CREAM PUFF PASTRY 
2/3 c. water
1/3 c. butter
2/3 c. flour
1/8 tsp. salt
3 eggs

Combine water and butter in a medium saucepan; bring to a boil. Add flour and salt at once, stirring vigorously over medium high heat until mixture leaves sides of pan and forms a smooth ball. Remove from heat and cook 4-5 minutes. Add eggs, one at a time, beating thoroughly with a wooden spoon after each addition; then beat until dough is smooth. Drop cream puff pastry into 8 equal mounds 3 inches apart on an ungreased baking sheet. Bake at 400 degrees for 30 to 35 minutes or until golden brown. Cool away from draft. Cut off top and spoon out soft dough. Fill with filling of your choice.
