RITZ PECAN PIE 
20 Ritz crackers
1 c. pecans
3/4 c. sugar
3 egg whites
1 tsp. vanilla

TOPPING:

2 pt. whipping cream
1 tbsp. confectioners' sugar
1 tsp. vanilla
1 or 2 drops almond extract

Break Ritz crackers small. Break pecans small. Beat egg whites until stiff. Mix well with spoon and put in slightly greased pie pan. Bake at 350 degrees for 20 minutes. Whip 1/2 pint whipping cream stiff, with 1 tablespoon confectioners' sugar and 1 teaspoon vanilla. Add 1 or 2 drops almond extract.
