PECAN RITZ PIE 
3 egg whites
1/2 tsp. cream of tartar
1 c. white sugar
20 Ritz crackers, rolled fine
1 tsp. vanilla
3/4 c. chopped pecans

TOPPING:

1/2 pt. whipping cream
1/4 c. brown sugar
1/4 c. pecans, chopped

Beat egg whites well with cream of tartar. Add white sugar. As beating, fold in rolled Ritz crackers, 3/4 cup pecans and vanilla. Mix well. Pour into well-greased pan (9 inch or 2 small aluminum). Bake at 350 degrees for 25 to 30 minutes.

Cool, cover with whipped cream and brown sugar mixture. Sprinkle with pecans. Refrigerate 4 to 5 hours.
