ORANGE SALAD TOSS 
DRESSING:

3 tbsp. orange juice
1 1/2 tbsp. red wine vinegar
1/4 c. salad oil
2 tbsp. sugar
1/2 tsp. orange peel, grated
1/4 tsp. salt
Freshly ground pepper

In small bowl, combine orange juice and vinegar. Gradually add salad oil, beating constantly with wire whisk, until all oil has been added. Beat in remaining dressing ingredients; set aside.

SALAD:

1 sm. head lettuce
1 sm. zucchini, thinly sliced
Spinach
1 orange, peeled and cut into 1/2 inch pieces
1 sm. onion, thinly sliced

In large bowl, toss lettuce, zucchini, spinach, orange sections and onion. Just before serving pour dressing over salad and toss lightly. Makes 4 servings; about 225 calories each.
