WILTED LETTUCE 
4 c. fresh shredded lettuce
6 slices bacon, diced
1/2 c. water
Salt
1 sm. onion, minced
1/4 c. vinegar
4 tbsp. sugar
Pepper

Brown bacon in fry pan. Remove bacon with slotted spoon and add to lettuce and diced onion. Combine vinegar, water, and bacon fat. Heat to boiling. Add seasonings and sugar. Combine with lettuce mixture. Mix well. Drain liquid back into pan. Boil again. Add to lettuce. Repeat boiling and mixing steps at least 3 times to get lettuce wilted down well. You must start with a mountain of lettuce as it wilts down to at least 1/5 of what you started with.
