WILTED LETTUCE 
6 slices bacon
1/4 c. water
1/4 c. vinegar
1/4 c. sugar
Salt and pepper to taste
1-2 lg. eggs
2-3 scallions (or more)
2 c. garden lettuce

Wash lettuce thoroughly and tear to size. Drain well. Chop scallions to desired size. Mix in salad bowl.

Cut bacon into small pieces and fry until crisp. Remove from skillet and drain. Discard all but 3 tablespoons of fat. Remove skillet from heat.

In 1 cup measuring cup, measure 1/4 cup water. Add vinegar to 1/2 cup line. Add 1/4 cup sugar and stir until dissolved. Pour into bacon fat in skillet. Return to burner and bring to rapid boil.

Beat eggs in bowl. Whisk rapidly the vinegar/water in skillet while gradually adding beaten eggs. Remove from heat. Pour over lettuce and scallions. Toss. Let sit a few minutes while the lettuce wilts. Toss again and serve.

Serves 2 or 3.
