SHRIMP & RICE SALAD 
1/2 c. rice (measured before cooking)
1 (4 1/2 oz.) can shrimp
1/2 green pepper, chopped
1 sm. onion, chopped
1 c. cauliflower (broken into pieces the size of peas)
6 or more stuffed green olives, sliced

Cook rice as directed on package. Cool. Combine rice, shrimp, green pepper, onion, cauliflower and green olives. Add dressing.

DRESSING:

Juice of 1/2 lemon
1/2 c. mayonnaise
Salt & pepper to taste
