TURKEY WITH HAM AND CHEESE 
Flour for coating
Salt and pepper
1 turkey cutlet (about 1 1/2 lbs.), cut into 4 slices
1 egg, beaten
2 tbsp. oil
2 tbsp. butter
4 slices cooked ham
4 slices Bel Paeso or Mozzarella cheese

Season the flour with salt and pepper. Coat the turkey with the flour, then dip into the egg to coat. Heat the oil and butter in a large skillet. Add the turkey and saute for about 4 minutes on each side. Drain and transfer to a broiler pan.

Cover each turkey slice with a slice of ham and then with cheese. Broil for 1 minute or until the cheese is golden and bubbly. Serve immediately. Yields: 4 servings.

NOTE: Chicken cutlets may be used instead of turkey.
