BOSTON BAKED BEANS | |
2 lbs. California pea beans 1 lb. salt pork 1/2 c. sugar 2/3 c. molasses 2 tsp. dry mustard 4 tsp. salt 1/2 tsp. pepper 1 med. onion 2 tbsp. ketchup Soak beans overnight. In the morning parboil them 10 minutes with a teaspoon of baking soda. Then run cold water through beans in a colander. Dice pork in cubes. Put half on bottom of a 2 quart bean pot with whole onion. Add beans. Add the rest of the pork on top. Mix remaining ingredients and pour over beans. Add some water and extra ketchup so that it won't dry out. Cook 6 hours at 300 degrees. Serves 10. |
