ARTICHOKE FRITTATA 
2 jars marinated artichoke hearts, drained but reserve oil from 1 jar
4 eggs
Salt & pepper to taste
1 clove garlic, minced
1 bunch green onion, chopped
1/2 lb. Cheddar cheese, grated
6 soda crackers, mashed
1/8 tsp. oregano
1/4 tsp. parsley
1/8 tsp. Tabasco

Drain hearts, into frying pan. Chop artichokes fine and set aside. Add onion and garlic to pan. Fry. Drain off juice. Beat eggs and add all other ingredients. Mix well. Bake at 325 degrees for 30 minutes or until set in an 8 x 8 inch dish or 9 inch pie pan. Yield 6 servings.
