"ONE-BOWL" COCONUT DROP COOKIES | |
2 c. all-purpose flour, sifted 1 tsp. double-acting baking powder 1/2 tsp. Durkee's nutmeg 1 c. sugar 1/2 tsp. salt 2 lg. eggs Grated rind of 1 lemon 1 can or 1 pkg. Durkee's coconut 1/2 c. Durkee's butter 1 tsp. Durkee's orange extract 1/2 c. milk Have all ingredients at room temperature. Grease 2 cookie sheets. Preheat oven to 375 degrees. Sift dry ingredients into large bowl. Add lemon rind and coconut and blend well with wooden spoon. Add butter. Add orange extract to milk. Add milk (use 2 extra tablespoons milk if you use dry coconut) and 1 egg and beat 150 strokes--or 1 minute slow-to-moderate speed in electric mixer. Add second egg and beat another 150 strokes. Drop mixture from teaspoon onto greased cookie sheets. Bake in moderate 375 degree oven for 12-15 minutes. Yield: approximately 4 1/2 dozen cookies. |
