PINEAPPLE COCONUT COOKIES 
1/4 c. plus 1 tbsp. flour (plain)
2 tsp. artificial sweetener
1/4 tsp. baking powder
2/3 c. instant dry milk
1/2 c. crushed pineapple (in own juice)
1/4 tsp. vanilla
2 tbsp. coconut

Preheat oven to 350 degrees. Sift together first 3 ingredients; add remaining ingredients, except coconut and mix well. Drop by teaspoonful onto non-stick baking sheet sprayed with Pam, allowing room for cookies to spread. Sprinkle cookies with coconut. Bake until brown. Remove from pan. Cool until they become crisp.
