BANANA - CURRANT MUFFINS 
1 c. unbleached flour
1 1/4 c. wheat flour
1/3 c. sugar
2 tsp. baking powder
1/2 tsp. baking soda
2 tsp. cinnamon
1/2 tsp. nutmeg
1/2 c. buttermilk
1/2 c. oil
2 ripe banana, mashed
1 egg
1 c. currants

Mix all dry ingredients. Stir together buttermilk, oil, egg and bananas in separate bowl. Add to dry mixture until combined, fold in currants. Bake at 375 degrees for 15 to 20 minutes.
