BANANA NUT MUFFINS 
2 lg. ripe bananas, mashed
1/2 c. sugar
2 eggs
6 tbsp. butter, melted & cooled
1 tsp. vanilla
2 c. flour
2 tsp. baking soda
1/4 c. buttermilk
1/2 to 3/4 c. chopped walnuts or pecans

Combine bananas, sugar and eggs, mixing well. Stir in melted butter and vanilla. Add flour, soda, buttermilk and pecans and stir just enough to combine. Spoon into paper-lined muffin tins (squirt a little PAM on the paper - makes them come out more easily). Bake at 350 degrees for 20 to 22 minutes.

These muffins are easy and very good. I have made them many times.
