GREEK YOGURT COFFEE CAKE | |
2 c. butter 1 c. sugar 2 eggs 1 tsp. vanilla 1 c. yogurt 2 c. flour, sifted 1 tsp. baking soda 1 tsp. baking powder 1/2 tsp. salt Nut mixture (see below) Cream butter and sugar until fluffy, beat in eggs, one at a time. Add vanilla. Alternately add sifted dry ingredients and yogurt, 1/3 at a time. Beat until smooth. Spread half of batter in greased and floured 9 x 12 x 2 inch pan. Sprinkle half of nut mixture over batter. Pour remaining half of batter and top with remaining nut mixture. NUT MIXTURE: 1 tsp. cinnamon 1/3 c. brown sugar 1/4 c. sugar 1 c. walnuts, chopped Mix all ingredients, use as directed in step 3 above. Bake in 350 degree oven for 35 minutes. Serves 12. |
