HUNGARIAN BEEF | |
1/2 c. oil 1 med. garlic clove 5 lbs. beef, cut in 1 inch chunks 4 med. onions, sliced 3 (6 oz.) cans tomato paste 1 tbsp. grated lemon peel 2 1/2 c. water 1 tbsp. paprika 1 tbsp. salt 1 tbsp. pepper 1 bay leaf 2 oz. pkg. bow tie noodles 2 tbsp. butter 1 tbsp. minced parsley 1/2 tsp. caraway seed About 2 1/2 hours before serving, cook garlic in hot oil for 1 minute. Add meat, onions and cook until lightly brown. Stir in tomato paste, water, paprika, salt, pepper and bay leaf. Heat to boiling. Reduce heat to low, cover, simmer 2 hours or until tender, stirring often. Cook noodles, drain and toss with butter and parsley. Sprinkle meat with lemon peel and caraway seed. Serve over noodles. Serves 12. |
