SWEET 'N LOW HUNGARIAN GOULASH | |
1 1/2 lbs. cubed lean beef 2 medium onions, sliced 1 (1 lb.) can whole tomatoes 1 (8 oz.) can tomato sauce 1 1/2 tbsp. paprika 1 packet Sweet 'N Low Freshly ground pepper to taste 3 c. cooked (6 ounces uncooked) whole wheat or spinach noodles 1 c. plain low-fat yogurt In medium size non-stick saucepan, brown beef on all sides. Remove beef and set aside. In same saucepan, cook onions until transparent. Return beef to pan and add tomatoes, tomato sauce, paprika, Sweet 'N Low, and pepper. Cover and simmer over very low heat 1 hour. Uncover slightly and let simmer 30 minutes or until meat is tender and sauce has reduced a little. Meanwhile, prepare noodles according to package direction, omitting salt. Remove goulash from heat. Stir in yogurt. Reheat to serving temperature without boiling. Serve over hot noodles. Per serving (1 1/4 cups) : Calories, 230; fat, 5g. 6 servings. Note: If you don't own a non-stick saucepan, you can spray your saucepan with a non-stick coating agent. |
