VIDALIA ONION CASSEROLE 
3 lg. onions (peeled and thinly sliced)
3/4 stick butter
1/2 c. Parmesan cheese
1/2 tsp. white pepper
1/2 tsp. salt
Crispy butter crackers (Ritz, etc.), crumbled

Place onions in baking dish and dot with butter. Cover with plastic wrap and microwave 3 minutes on HIGH. Stir and continue to cook 5-7 minutes more.

Remove from oven and stir in cheese, salt and pepper. Cover and let stand 5 minutes while cheese melts. Add cracker crumbs to top. I usually double this recipe. Great with steaks or beef roast.

NOTE: Walla Walla onions may also be used.

Since microwave ovens vary in power, you may need to adjust your cooking time.
