MARK TWAINS FAVORITE MINCE CAKE (OLD-TIME) | |
1 c. butter 1 c. sugar 4 eggs 2 c. sifted flour 1/2 tsp. baking powder 1 tsp. nutmeg 1/2 tsp. salt 1/4 c. brandy 1/4 c. whipping cream 1 (9 oz.) pkg. condensed mince meat, crumbled 2 tbsp. flour Cream butter and sugar. Add eggs, one at a time; beat well after each. Sift dry ingredients. Combine brandy and cream. Add dry ingredients and brandy and cream mixture alternately to butter mixture, beginning and ending with dry ingredients. In small bowl, combine crumbled mince meat with 2 tablespoons flour. Mix until mince meat is separated and well dredged with flour. Fold into batter. Spoon batter into a greased and waxed paper-lined 9-inch tube pan. Bake at 325 degrees for 1 hour and 10 minutes, until cake is golden brown. Cool in pan for 10 minutes. Turn cake out and remove waxed paper. |
