MINCE CIRCLE CAKE 
3/4 c. butter, softened
1 1/2 c. sugar
2 eggs
1 1/2 tsp. vanilla
2 1/2 c. all-purpose flour
2 1/2 tsp. baking powder
1 tsp. salt
1 c. apple juice
1 c. prepared mincemeat

In a mixer bowl, cream (beat together) butter and sugar until light and fluffy, 8 to 10 minutes at medium speed of an electric mixer, scraping the bowl frequently. (Caution: Don't cut corners on creaming. It takes awhile to incorporate air for a light texture. Allow even longer if you are using a portable mixer.) Fold in prepared mincemeat into batter. Turn into well greased and floured 8 1/2 inch fluted tube pan. Bake in 350 degree oven for 55 to 60 minutes, or until done. Let cool in pan 10 minutes. Remove from pan; cool on wire rack. Drizzle with Apple Icing.

APPLE ICING:

Combine 1 cup sifted powdered sugar and 2 tablespoons apple juice to make of drizzling consistency. Spoon over cake.
