GRANNY'S JAPANESE FRUIT CAKE 
2 c. sugar
2 lemons (juice & rind)
2 tbsp. flour or cornstarch
1 whole coconut, grated
2 tbsp. butter
1 c. hot water

Mix all together. Boil 5 to 10 minutes or until as thick as you want. Let cool before spreading between layers.

LAYERS:

2 c. sugar
3 1/2 c. flour (self-rising)
6 eggs
3 sticks butter
1 c. milk

Cook 2 layers and put 1 pack of ground raisins and 1/2 teaspoon each of cinnamon, cloves and allspice in the rest of batter. Put together alternately with filling. Makes a rather large cake.
