BARLEY CASSEROLE 
1/4 lb. butter
2 med. onions, chopped
3/4 lb. fresh mushrooms, trimmed and sliced
1 1/2 c. pearl barley
3 pimentos, chopped
2 c. chicken stock
Salt and pepper to taste

In large skillet, melt 1/4 pound butter. Stir in onions and mushrooms and saute until golden. Add pearl barley and cook until barley is a delicate brown. Transfer mixture to casserole. Add pimentos, chicken stock, salt and pepper. Cover and bake in 350 degree oven for 50-60 minutes until barley is tender and liquid absorbed.
