BAKED BEAN MEXICALI | |
1 tbsp. salad oil 1 med. onion, sliced 1 med. green pepper, coarsely sliced 1 tbsp. brown sugar 1 (28 oz.) can baked beans 1 tsp. chili powder 1/2 tsp. salt 1/2 tsp. oregano 1/2 c. coarsely crumbled corn chips About 45 minutes before serving: Preheat oven to 350 degrees. In large skillet over medium heat, in hot salad oil, cook onion and green pepper with brown sugar until tender about 5 minutes. In greased 1 1/2 quart casserole, combine onion mixture with beans, chili powder, salt and oregano. Sprinkle with corn chips. Bake 30 minutes. Makes 5 or 6 servings. |
