SWEET SOUR RED CABBAGE | |
Med. to lg. red cabbage 3 c. water 1/4 c. vinegar 1/4 c. ReaLemon 2/3 c. sugar 1/2 lb. bacon (optional) 2 med. onions 3 apples 2 tbsp. flour 1 stick butter (if bacon is omitted) Salt to taste (optional) Chop red cabbage, add liquid ingredients and boil in a covered pot over slow flame. Add sugar. Cut bacon, chop onions and saute in fry pan until onions and bacon are golden brown. Core, peel and dice apples and add to cabbage. Spoon bacon and onions into cabbage. Reserve 1/2 cup of drippings in fry pan and lightly brown the flour. (If bacon is omitted, use butter.) While red cabbage is simmering, add browned flour and stir. Let simmer longer, until cabbage is done to your liking. Salt to taste. Leftover cabbage freezes well. To reheat, add a little water. |
