CHOCOLATE CHIP KISSES
(MERINGUES)
 
2 egg whites
1/8 tsp. salt
1/8 tsp. cream of tartar
3/4 c. granulated sugar
1 pkg. chocolate chips
1/2 tsp. vanilla

Beat egg whites until foamy throughout. Add salt and cream of tartar and continue beating until eggs are stiff enough to hold up in peaks (not dry). Add sugar 2 tablespoons at a time, beating thoroughly after each addition. (This is important or they will be grainy.) Fold in chocolate chips and vanilla.

Drop from teaspoon on ungreased brown paper. Bake in a slow oven (300 degrees F) 25 minutes or until brown. Remove from paper while slightly warm, using a spatula. Makes about 20 to 25 kisses.

Variation: Use peanut butterscotch chips.
