ZUCCHINI PIE 
3 c. zucchini, raw, peeled and diced
1 sm. onion, chopped
1 c. pancake mix
4 eggs
1/2 c. vegetable oil
1/2 c. Parmesan or Romano cheese
1/2 tsp. marjoram
1 tsp. parsley flakes
1/4 tsp. salt
1/8 tsp. pepper

Mix all of the ingredients together until the zucchini is well coated. Pour into buttered pie dish. Bake at 350 degrees for 30-40 minutes or until golden brown.
