These are very addicting. Diabetics should not stand near the baking area, or they will be so tempted by the aroma they might eat. 1 cup sugar 1 cup light corn syrup (Karo) 1 cup peanut butter (I use creamy) 3/4 box Special K cereal (about 7 cups) 1 (6 oz.) bag chocolate chips OR 1 (4 oz.) baking chocolate bar Add sugar and corn syrup in a large pan on medium-high heat. Bring to a boil, stirring constantly. Take off heat, stir in peanut butter thoroughly. In a large bowl, partially crush Special K cereal. Scrape gooey mixture into the Special K bowl and stir until fully coated. Spread onto a 8x10-inch or 9x12-inch pan. Allow to cool. Melt chocolate and spread over top (a double boiler is best). Cool or eat hot. Note: These can be eaten after being frozen and re-heated in a microwave. They will still be good, albeit... soggy. Submitted by: RoseHill |
