CHICKEN ROLLATINI 
1 pkg. Good Seasons Italian dressing
Red wine vinegar
Olive oil
6 chicken cutlets
Bread crumbs
6 slices of Mozzarella cheese (6 to 8 oz.)

Make dressing according to directions on package. Soak chicken cutlets in dressing for a few hours if time permits. Grease baking dish with one to two tablespoons of dressing. Place approximately 1 cup of bread crumbs onto a plate. Take one cutlet from dressing and place on top of bread crumbs. Leave cutlet on bread crumbs. Take 1 slice of Mozzarella cheese and place on the unbreaded side of the cutlet. Wrap the cutlet sides around the cheese and place toothpicks in it to hold it closed. Continue with the rest of the cutlets. After they are all lined up in the dish sprinkle rest of salad dressing on the cutlets. Keep the cutlets as close as possible to reduce the amount of lost cheese. Bake at 350 degrees for about 40 minutes or until golden brown. Serve with rice or noodles.
