BROCCOLI AND RICE CASSEROLE | |
2 (10 oz.) boxes broccoli, chopped 1/2 c. chopped onion 1/2 c. finely chopped celery 2 sticks butter 1 c. Minute Rice 1 (8 oz.) jar Cheese Whiz 1 c. Pepperidge Farm stuffing mix 1 can sliced water chestnuts, drained 1 can cream of mushroom soup Cook broccoli according to directions. Melt 1 stick of butter and cook onion and celery in it until tender. Prepare 1 uncooked cup of rice according to package instructions. Combine broccoli, onion and celery, rice, water chestnuts, cheese whiz and cream of mushroom soup in an 8 x 12 inch casserole. Melt second stick of butter and mix with stuffing mix and spread over top of casserole. Bake at 350 degrees until bubbly, about 20 minutes. Makes a large amount but can be cut in half. |
