SHRIMP SCAMPI | |
1 lb. shrimp (steamed & cleaned) Garlic salt to taste 1 onion, chopped 1/2 red, yellow or green pepper, chopped 2 tbsp. butter 1 1/2 c. water 1 pkg. chicken gravy mix 2 tbsp. lemon juice 2 c. Minute Rice, uncooked 1/4 c. chopped parsley Add fresh or canned mushrooms Saute onion, pepper and garlic salt in butter in large skillet. Combine water and gravy mix; add to ingredients in skillet, plus the shrimp, lemon juice and salt. Bring to a full boil, then stir in rice and parsley. Cover. Remove from heat. Let stand 5 minutes. Fluff with fork. Serves 4. |
