SHRIMP SCAMPI (MICROWAVED) 
4 tbsp. butter
3 cloves garlic, finely minced
1 lb. shrimp, shelled and deveined
1/2 c. chopped parsley
Salt and pepper to taste

Put butter and garlic in a casserole dish. Microwave on high (100% power) for 1 1/2 to 2 minutes or until butter is melted. Stir in shrimp and continue cooking on high (100% power) covered, until shrimp turns pink for about 4 to 5 minutes. Stir once. Stir in parsley, salt and pepper. Let stand for 5 minutes before serving. Serves 4.

Since microwave ovens vary in power, you may need to adjust your cooking time.
