MOTHER'S APPLESAUCE CAKE
3 1/3 c. flour
1 tsp. baking soda
1/2 tsp. salt
2 tsp. cinnamon
1 tsp. cloves
1 c. shortening
2 c. sugar
2 eggs, well beaten
2 c. raisins (floured)
2 c. chopped nuts (floured)
2 c. applesauce

Grease and flour 9 x 13 inch pan (or tube pan) and set aside. Mix flour, salt and other spices together and set aside. Cream shortening and sugar. Add eggs, floured raisins and nuts. Add flour alternately with applesauce, beating hard after each addition.

Bake in moderate oven at 350 degrees approximately 45 minutes, or until golden brown and toothpick inserted comes out clean. This cake is best if covered tightly and you wait 2 days before cutting. May be frosted with white icing or eaten plain.

(Note: This cake can be the basis for a GREAT fruitcake by adding candied fruit (floured) along with raisins and nuts! Fruitcake should be cooked very slowly - 275 degrees - until done).
