Makes good pineapple pie filling. It's hard to tell the family they're eating zucchini when they think it's really pineapple. 9 c. peeled, ground zucchini 3 c. sugar 1 (46 oz.) can pineapple juice 1/2 c. lemon juice (VERY IMPORTANT) 1 (15 oz.) can pineapple (crushed) Not really necessary, but the first time I made it I wanted to make sure it turned out! Mix together and bring to a boil. Simmer 20 minutes. Pour into hot jars and seal. Process 20 minutes using pint jars in boiling water bath. |
