CRUSHED PINEAPPLE-CARROT MOLD 
1 (#2) can Libby's crushed pineapple
1 pkg. lemon flavored gelatin
1/2 c. sugar
1/2 pt. whipping cream, whipped OR 1 sm. container Cool Whip
2 tbsp. lemon juice
1 c. finely grated carrots
1/4 tsp. salt

Drain pineapple into a saucepan. Add enough water to pineapple syrup to make 1 1/2 cups. Heat to a boil. Add gelatin. Stir until dissolved. Add sugar, salt, and lemon juice. Chill until slightly thickened. Add pineapple and carrots. Fold whipped cream into gelatin. Pour into mold. Chill until firm.

NOTE: If you use Cool Whip, don't use any sugar.
