ORANGE CARROT MOLD | |
2 (3 oz.) pkgs. or 1 (6 oz.) pkg. orange flavored gelatin 2 c. boiling water 1 1/2 c. cold water 1 tbsp. lemon juice 3 oranges, peeled and sectioned 1/2 c. shredded carrot 3 tbsp. sliced scallions Dissolve gelatin in boiling water. Add cold water and lemon juice. Pour 3/4 cup of the mixture into 6 cup mold. Chill until set, but not firm. Arrange several orange sections, overlapping, over gelatin. Add another 1/2 cup gelatin. Chill until set, but not firm. Meanwhile, chill remaining gelatin until thickened. Dice remaining orange sections. Fold oranges, carrots, and scallions into thickened gelatin. Spoon into mold. Chill until firm, at least 4 hours. Unmold and serve with crisp salad greens garnished with carrot curls and scallion brushes, if desired. Makes 6 cups. |
